Another milestone! And my reward…

My Reward!I’ve been struggling with whether or not to post my current weight on here, although I’m sure it isn’t hard to figure out… but I think I will leave it for a bit longer. But I will say that today marked a very important milestone. πŸ™‚ I promised myself when I reached this milestone I would buy myself a reward, and so I did! (look right)

For those that don’t know, “Keep Calm and Keto On” is sort of a Keto “motto”. I don’t know the real reason behind it, but I can assume that it’s probably because sometimes battling carb addiction and the inevitable road bumps that come along with a diet that is as far from mainstream as you can get can be a little bit frustrating, and when that happens you just have to suck it up and… keto on!

Milestone Day!

As of today, I am 25% of the way towards my goal weight, and have also officially lost 20lbs (20.6lbs to be exact). The fashion fund is looking pretty tasty so far at $80 πŸ™‚

I also beat my old record time in rowing, I am now down to 10:51 for 2000m.

Jeans! I’m wearing jeans! :D

Sometimes, for some people, there comes a point where your clothes no longer fit, you hate how you look, and the idea of going out and buying a new pair of jeans that you can actually do up seems just… ridiculous. I don’t want to be this size, why the heck would I go and spend good money a pair of jeans to fit someone I don’t want to be? When it comes down to it, you can either admit defeat, go buy bigger, fatter clothes… or you can become the person you want to be.

I reached that point several months ago, I didn’t have any jeans that fit anymore, in fact the only pants I could fit into were jeggings and yoga pants (I even remember having to wear yoga pants when I had to appear in court as a character witness several months back because I didn’t have any dress pants that fit)… thankfully, I live in Vancouver where everyone and their dog wears yoga pants… everywhere, all the time… so it’s not that bad. But still, it would be nice to wear something that isn’t stretchy from time to time.

But I am proud to say, that as I sit here, typing this post… I am wearing jeans! The non-stretchy kind! It may seem silly to most, but it is in fact a small victory for me πŸ™‚

Goal jeans! I WILL wear you again!!

Speaking of jeans, a future victory I hope to achieve (though it probably won’t be for several months yet) is to fit into my most favourite pair of jeans I have ever owned. I bought them when I was 19 and about 57lbs lighter than I am now, and unfortunately I haven’t fit into them in years. It’s actually kind of a funny story… I wanted a new pair of jeans, so I went over to the mall, tried on a few pairs, and when I tried this particular pair on they looked so damn good I thought to myself “I don’t care how much these cost, I must have them!!”. So I naively walked up to the cashier to pay for them without looking at the tag, and nearly had a heart attack when the bill was over $200 for a single pair of jeans… I have now dubbed them my goal jeans, and I will wear them again someday!!

Anyways, that’s about it for today other than to say it seems I have found my keto stride and am making good progress. I have lost 4.2lbs in the last week and hopefully by next week I will have reached both the 25% mark, as well as the 20lbs down mark (which means reward time!).

Fatburger and Fail Muffins

You would think that a burger joint with the word “fat” in it and a high fat diet going hand in hand would be a no-brainer, however… I am still epicly impressed with Fatburger! One night we were feeling a bit lazy so we figured we’d have some burgers. I was getting a little tired of McDonald’s crap (especially because it’s literally in the same building where we live), and since I’d never been there before, we decided to give Fatburger a try. Once I read through their menu and they said that you can order any burger with no bun and they will wrap it in lettuce for you, and add on to that that they have awesome burger additions such as guacamole and egg… I was sold! I ordered the old style bacon cheddar burger with egg and no bun… and this is what I got: (top right)

I know the image quality is not the best, but they practically made a bun out of lettuce, wrapped it in a nice little paper wrap so you can hold it… it was actually edible as a burger instead of the usual bunless burger where you have to drag out the old fork and knife! And aside from presentation, it was delicious! Definitely going to be visiting fat burger again!

Fail Muffins 😦
2013-11-17 15.18.40Someone on /r/keto posted a link to a blueberry muffin recipe the other day, and it sounded pretty good! Since I’m not a huge fan of blueberries, I decided to modify it and turn it into a chocolate strawberry muffin recipe. I added 1 tbsp of unsweetened cocoa powder, 2tbsp of chocolate protein powder, replaced the stevia with 2 tbsp of Splenda, and replaced the unsweetened almond milk with unsweetened chocolate almond milk. And of course, replaced the blueberries with strawberries. The whole apartment smelled amazing for the entire time they were in the oven, and I was super excited to try them… and then I pulled them out of the oven and…. this is what they looked like: (look left)

They definitely didn’t look muchΒ  like muffins… and somehow despite adding chocolate almond milk, chocolate protein powder, and cocoa powder, they had absolutely no chocolate taste to them at all. They were a bit too dense, but to be honest I’ve found that to be a trend when trying to bake keto foods with almond and/or coconut flour… unfortunately they just don’t rise the same way that regular flour does. They tasted just okay… edible, but not something I’d make again. Even my cat took it upon himself to toss one into his water dish 😦

Progress Report
So this week I am officially back on my way to my goal! Not only have I lost 2lbs, but I was finally able to beat my rowing time from October 28th (2000m @ 11:49)… twice! 2000m @ 11:22 on November 13th, and 11:15 on November 15th. I think my times may begin to go up for the next week or two as I’m going to try and focus on increasing the distance before I need to take a break. This usually leaves me winded and impacts the over all time because I need to take more breaks after my initial “burst”, but I think if I can keep pushing it, eventually I will be able to do the entire 2000m in a single shot without needing breaks at all (which ideally will give me an awesome overall time).

I’ve decided to give myself a small reward once I reach 20lbs down, I’ll be sure to post a picture when I do! πŸ™‚

Quickie Update!

Just a small update for today…

I’m proud to say that I have completely reversed the damage done on my birthday cheat weekend, and am now merrily on my way to onederland πŸ˜€

Also, I tried the last flavour of Quest bar (as mentioned in yesterday’s post), peanut butter and jelly… and I must say, this is definitely my favourite. It reminds me of a PB&J granola bar I used to have when I was a kid.

Lastly… the header on my blog (or lack thereof) is really bugging me. I would massively appreciate any suggestions you could throw my way! I am pretty decent at graphic design and graphic editing (it is my job, after all) but unfortunately I lack any skill when it comes to drawing…

My Fat Fashion Fund, Amazing Avocados, and Monkey Bombs!

I’m back in ketosis! Huzzah! So far I have lost about 5 of the 6lbs I gained over my birthday weekend… hopefully in the next day or two I’ll be back to where I was and on my steady way to my goal weight πŸ™‚ So far I have successfully kept my net carbs at less than 20g per day consistently for the past week, and am fully back into my workout schedule.

I even managed to keep myself on keto while on a day trip down to Seattle (where I had no access to the googles to check carb values on foods due to expensive roaming data…) AND even though a medium coffee from Tim Horton’s has significantly more carbs than I had anticipated… For some reason a medium coffee with 2 cream and 2 Splenda from Timmy Ho’s has a whopping 6g net carbs! This makes absolutely no sense to me as a large Iced Coffee with Splenda from McDonald’s is only 2g net carbs (and 1 cup of regular homemade coffee with cream and Splenda is only 1g net carbs)… if anything I would have expected regular Tim Horton’s coffee to have fewer carbs than McD’s iced coffee, not more. I think I’ll stick to my iced coffees or homemade coffee…

I have added a new method of self-motivation to my repertoire; I started a “Dani’s Fat Fashion Fund”! For every pound I lose (retroactively) I will add $4 to the jar, and when I reach my goal weight I will use the jar money to buy myself some awesome new skinny people clothes! So far the jar has $60 πŸ˜€ by the time I am at my goal weight it will be over $320.

New Recipes!
So I know I am a little late to the game but, I have just discovered the amazingness that is avocados. Avocados are like… the most perfect keto food in existence. Super high in fat and fibre, and super low in net carbs. Today I made myself a baked avocado egg… it turned out pretty awesome! There are tons of sites out there with avocado egg recipes, but they’re all pretty much the same; cut avocado in half, take out pit, crack egg into the space, bake at 425 until the egg is done (10-20 min), top with spices/chives. Unfortunately the recipe I followed called for 1 egg per avocado half and well… I’m going to take a stab in the dark and say they weren’t using extra large eggs like I was. Next time I’ll know to use 1 egg per avocado instead πŸ™‚ I also have a recipe for avocado fries that I’m excited to try, I’ll update once I’ve given it a go.

I also made fat bombs for the first time. I mentioned fat bombs in an earlier post, but didn’t actually get around to making them until today (mainly because I didn’t get over to Michaels until yesterday to get my silicone baking mold). So I started with this peanut butter fat bomb recipe and modified it a bit… I call them Monkey Bombs! πŸ™‚ I replaced the Stevia with Splenda, and the peanut butter with Dark Chocolate Banana Monkey Butter, and left out the crushed peanuts (Monkey Butter already has bits of nuts in it). The original recipe has around 1.4g net carbs per bomb, and my version is slightly higher at 1.7g net carbs per bomb.

Ingredients:

  • 1 cup coconut oil
  • 1/2 cup Dark Chocolate Banana Monkey Butter
  • 4 tsp granulated Splenda
  • 8 tbsp unsweetened cocoa powder
  • 1/2 cup butter

  1. Exactly like the original recipe, mix all ingredients in a pot over medium low heat until melted and well blended.
  2. Place a silicone baking mold on top of a cookie sheet (I used a cutting board, as long as it is sturdy enough that it won’t flop around when transporting to the freezer).
  3. Pour the mixture into each of the 24 molds and freeze for 30 minutes.

Nutrition info per bomb: 149 Calories, 16g Fat, 1g Protein, 1.7g Net carbs.

Quest for Quest Bars
My last bit of good news for this post is that I finally found some Quest bars nearby! Quest bars are essentially just like every other protein bar out there, except they are super low in net carbs. They’re pretty popular on the keto subreddits, especially on /r/ketogains (the subreddit for keto in combination with exercise). I bought 4 different kinds; cookie dough (3g net carbs), mixed berry bliss (4g net carbs), peanut butter & jelly (4g net carbs) , and chocolate brownie (5g net carbs). I’ve tried all except the PB&J so far, and I think cookie dough is probably my favourite, followed by berry bliss. I’m not impressed with chocolate brownie at all… it tastes like someone burnt the brownies. This is especially unfortunate because the chocolate brownie flavour had a buy 3 get 1 free deal so I have 3 more to go through 😦

I wasn’t able to find ketostix at either of the health stores I went to for the quest bars, but I think I’ll be okay to keto on without them πŸ™‚

Gifts from the cream cheese gods!

Back to keto, day 2!

So far I’m doing well, I’ve shed about 3 of the 6lbs I gained over the weekend, and managed to keep myself at 12g net carbs for both yesterday and today. I feel so much better than I did on the weekend, though I think I can feel a touch of keto flu* as I’ve been sleeping a lot, but I’ll get back on my supplements and I should be fine.

I discovered something epic today while I was at the store… My neighbour and friend had given me some spreadable aged cheddar about a week ago and I had been spreading it on slices of garlic sausage (omg it’s amazing) but unfortunately I ran out… so I went to get some more and found it was $9 for a small container… soooo I looked around and found Philadelphia Whipped Cream Cheese with Chives. $3.50 for a container, and holy crap that stuff is amazing. I could eat it with a spoon. Srsly. And with only about 1g net carbs per 2 tbsp, I can afford to!

I also got myself back to working out today! A little bit of back story… basically, about 4 years ago I bought myself a concept 2 rowing machine (AKA an ergometer), and shortly after I moved into an apartment less than half the size of my old one (and twice the rent but… location, location, location!) so, I handed off my rower to my best friend for safe keeping and also because he was the one to originally get me into rowing I figured he may get some use out of it. 3 years later, I decide I want to change my life and I’m willing to sacrifice the apartment space, so I got it back from him and since September 16th I have worked out every Monday, Wednesday, and Friday with only 2 exceptions; early in the beginning when I was still getting used to it I managed to pull a muscle and took a bit of time to recover, as well as this past Monday for my birthday.

Anyways, I’ll cut to the point… I’m pretty proud of my progress, although I feel I may have hit a wall at this point. When I first got the machine back from him I was not quite able to do a full 2000m, so I started small and worked my way up and well… here are some of my times:

They aren’t great times by any means (nor are they all of my times, of course), but the progress is something I’m pretty proud of. As of yet, I haven’t been able to beat my time on Oct 28th, but I’m still trying… πŸ™‚ Today I was only able to do 12:48, but I’ll chalk that up to still recovering from my carb binge… but 12:48 is still better than all my times within the first month, so go me! πŸ˜€

Anyways, that’s all for today… hopefully I’ll be back in ketosis within the next couple of days and I can get myself fully back on track!

*keto flu: A “flu-like state” that can occur at any time during ketosis, but is most common when your body is still becoming keto-adapted. The main symptom is usually fatigue, but keto flu can be easily avoided by ensuring your electrolytes are at a good level. This means you should try to maintain a daily intake of 5000mg of sodium, 1000mg of potassium, and 300mg of magnesium. If you’re having trouble keeping your electrolyte levels up, Potassium and Magnesium supplements are not hard to find (check your local pharmacy or vitamin store) and are often found in regular multivitamins, and you can increase your sodium intake by either simply adding extra salt to all of your food, or drink 1 or 2 cups of broth/bouillon per day.

Back to keto… Day 1

Normally I’d try to come up with a witty/punny title but… oh my god I feel like shit today. I need to be back in ketosis NAO! D:

So I’ve gained back 6lbs… please be water weight please be water weight please be water weight!!

I did not work out during my cheat weekend as I had originally planned… it’s amazing how sluggish carbs can make you feel. I even missed my regular rowing on Monday… I’m not too happy with myself over that… but I am in for the long haul now! No turning back!

As for today, I have decided to do a 23/1 intermittent fast* to help get me started back into ketosis. I’m also thinking of going ultra low carb (aiming for less than 15g) for the first few days to hopefully kick me straight back into keto. Maybe garlic sausage and spreadable aged cheddar again for dinner…. that stuff is delicious! I could also try making some fat bombs**, I have been meaning to try some but never have the time… but since I’m now unemployed I probably do have time πŸ˜› …and the added fat definitely couldn’t hurt!

P.S. A couple definitions for those of you new to keto:

*Intermittent Fast (IF): A schedule of eating where you do not eat for the majority of the day and then try to consume your daily allotment of calories within a specific amount of time. For example, a 23/1 IF would be where you do not eat or drink anything for 23 hours (drinking water and black coffee is okay, water is of course encouraged) and then have one large meal within the remaining hour. IF can help to put you into ketosis after a carb binge, and is also a common strategy for breaking plateaus.

**Fat Bombs: A small snack that is very low carb, low protein, and very high in fat. Fat bombs are very useful for keeping your fat macros up (which happens to be a struggle for me at times) and is also a good way to get a good energy boost during the day. The Fat Bomb image above is a recipe from Low Carb Coach which has 16g fat, 1g protein, and 1g net carbs.

So last night at midnight I started my 3 days off from keto… I was on the fence about whether or not I wanted to start after midnight or wait until morning, but when I got to the Halloween party I was going to last night and found that literally everything there was ultra carby, and I had forgotten to eat anything substantial earlier in the day… well, I opted for after midnight. But I definitely didn’t go overboard, I had a couple mini mars bars, one mini cupcake and a handful of chips, and even found that this morning I’m still apparently in ketosis. It’s strange how when you can’t have carbs, everything carb-filled seems so amazing and delicious and you want to eat it all… but when you go back to allowing yourself to eat them, they’re not all that great. Everything tasted just a bit too sweet, and the chips too oily… I think I’d be perfectly happy staying in keto, but I’ll allow myself the next few days, and ultimately eat what I want to eat (which may end up being fairly close to keto anyways).

I did enjoy a nice Bacon and Egg McMuffin this morning for breakfast, but couldn’t stomach the hashbrown (which is pretty unusual, but Jason managed to stomach it just fine :P). Overall I’m feeling a low level of “bleh-ness” today, which could be due to the carbs, or it could be equally due to the alcohol I had at the party. Although, I only had one drink at the party but being in keto drops my alcohol tolerance through the floor…

On that note, I’m just taking a small break from tidying in preparation for my birthday party tonight… I’m a little worried about how it’ll be tonight given my lowered tolerance, sometimes it’s difficult to avoid drinks when people are giving them to you as a birthday gesture πŸ™‚ I’ll have to have Jason (my fiance) look out for me and keep me in moderation (perhaps by passing my drinks to him… god help him on Sunday lol).

The beginning and the push…

Someone posted a question on reddit today; why did you choose to start keto? (as opposed to paleo, generic low carb, etc). This was my answer:

Well, to start i had done the south beach diet before, which is similar to keto and Atkins, and had seen some good, but temporary results. But i hadn’t heard of keto before, and as staying in phase one of south beach for longer than a month can be hazardous to your health, i had no idea that there was an “ultra low carb” diet that was sustainable over a long period of time.

I learned about keto from a reddit post someone had shared on Facebook. It was a success/progress post of a girl (which unfortunately i can’t seem to find now…) about my age, who weighed about what I weighed when i started keto, and after a year she had reached my goal weight. She had taken progress pics along the way and someone had put it together into an animated gif for her. The post made me realize that my goal is attainable, and if i start right now, by next year i could be at my goal, and the longer i put it off, the longer it will take.

So, i read into this keto diet she spoke about. She referenced /r/keto, so i read the FAQ and keto in a nutshell, and (this is the biggest draw for me) scientifically, it made sense. This wasn’t some random fad like “some scientists that have not been sourced say that eating bananas will increase your metabolism, so let’s all eat bananas all day everyday and you’ll lose over 9000 lbs in a month!!” This was something researched, measurable, and real.

In the end it had very little to do with being able to eat bacon and cheese all i want, to be honest I’d rather have chocolate πŸ™‚ but, i think it will be worth the sacrifice.

If you’re not already familiar with keto and /r/keto, I’ll fill you in:

A ketogenic diet is a LCHF diet, LCHF standing for Low Carb, High Fat (with moderate protein). When calculating your daily carbohydrate intake, you actually calculate your net carbs which essentially means you subtract the fibre from the total carb count of whatever you’re eating. You do not include fibre because your body can not digest fibre. Some people also subtract sugar alcohols such as xylitol, maltitol, etc (these are commonly found in foods advertised as sugar free/no sugar added), however this can vary person to person in terms of whether it affects ketosis.

Ketosis is the state your body goes into when you are on the diet; your body switches to using fat as your primary energy source instead of a combination of carbs, proteins, and fat. Your body will then produce a byproduct called ketones which are passed in your urine. You can buy a product called “ketostix” which will measure the concentration of ketones in your urine to tell you if you’re in ketosis or not. However, there are many obvious symptoms of ketosis, so many people believe ketostix to be a waste of money, personally I have never bought them, and haven’t seen them in any stores nearby.

Once your body goes into ketosis, most people experience a rapid weight loss for the first week or two, usually anywhere between 3 and 10 pounds per week. This is actually most likely water weight as your body will stop retaining water once you go into ketosis. After the initial “honeymoon period” the weight loss slows down, but most people will see results that are much higher than your typical calorie moderation diet. My personal experience has been an average of 2 to 3 lbs per week.

By inputting your weight, height, age, BMI, etc into a keto calculator, you can find the exact macros (daily carb/protein/fat intake) that are likely to put you into ketosis. The macros I’m currently working with are:

  • 20g Carbohydrates (7% of my caloric intake)
  • 85g Protein (28% of my caloric intake)
  • 86g Fat (65% of my caloric intake)

My main source of knowledge and one of my main sources for support is the keto subreddit, or /r/keto. I particularly find the success stories inspiring and motivating, because I know that one day I will be a success story too.

My fiance is not joining me on this journey, but he is very supportive, and never critical. He tells me every day how great I’m doing, he accommodates my strict diet and never complains. I am truly thankful to have such a wonderful partner by my side πŸ™‚

My friends are supportive as well. One of my best friends, Jess, is on her own diet “along side” mine, although it is not keto, it’s a diet that works for her. We keep each other motivated and check in from time to time πŸ™‚

I started keto on September 16th, 2013. I decided that day, that every day I put it off was more weight I would have on me at my wedding on May 3rd, 2014 (you can find my wedding blog here). I am more motivated and determined to lose weight and be healthy than I have ever been before in my life.

I started a MyFitnessPal account, and have tracked my food and exercise every day now for 45 days, and so far i have lost 15.6lbs. I had a bit of a bumpy start to the diet, for the first 2 to 3 weeks I was a bit of a keto newbie, and thought maybe a cheat day once a week would be okay… unfortunately for this diet, it’s not. It takes a few days for the body to go into ketosis, but a second for it to be kicked out, and as soon as you go out of ketosis, your body begins to retain water again. You can gain 5 or more pounds in a single day if you cheat… keto is definitely an all or nothing diet. On the positive, it is very easy to tell when you inadvertently go out of ketosis, and adjust your diet accordingly. Anyways, the first 2 or 3 weeks did not go too smoothly, but since realizing I can’t cheat on keto, I have lost 2 to 3 lbs consistently per week.

Some of you may be asking, why the hell would you want to do this to yourself? And my answer is… there are many many benefits:

  • Increased weight loss speed
  • Measurable results (aside from pounds and inches, you know it’s working if ketostix turn purple or if you notice the other obvious symptoms)
  • Scientifically sound and researched (it’s true, there are hundreds of studies out there that have found ketosis to be beneficial to your overall health and to be a sound method of weight loss)
  • Overall general health benefits (most people on keto find their doctors taking them off their cholesterol and diabetes medicines over time, among many others)
  • Increased energy (1g of fat contains more than twice the calories than 1g of carbs or 1g of protein, calories = energy. Think about it!)
  • Decreased appetite (many people on keto find they only need to eat 1 meal a day, and the diet itself supports “intermittent fasting”, i.e. eating for 1 hour a day and fasting for 23, or similar schedules)
  • You can eat all the bacon and cheese you want. Need I say more?

So, that’s my beginning story… I began this diet with 81.8lbs to lose, and as of today I have 66.2lbs left to go, and 6 months before my wedding. I don’t think I’ll reach my goal weight before the wedding, but I will try my hardest, and I will be more than happy if I can reach 50lbs by then. I’m not sure I’m confident enough to put my weight on here just yet… although I’m sure you can probably figure out a rough guesstimate from the amount I have to lose. If I haven’t posted my starting weight by the time I get down 50lbs I’ll post it then πŸ™‚

Anyways… as ironic as it is after spouting that long speech about keto and how amazing it is, today is November 1st, and I have decided to take the next 3 days off of keto… I don’t do cheat days anymore, but this is a special occasion (I didn’t even take Thanksgiving off!). It is my 27th birthday on Monday, and my birthday party is tomorrow. In addition to my birthday, it has been a particularly difficult couple of days; today is the first day in 8 years that I have been unemployed. I was officially laid off as of yesterday, 6 months before my wedding (and weddings are expensive!). Dieting and weight loss can sometimes be a stressful process, regardless of what diet you’re on, and it will be nice to have this one weekend to relax and enjoy a piece of cake, and not have to think about how many grams of carbs are in it, how much of it is fibre, what else I had to eat that day, etc… I know I will jump right back on the wagon come Tuesday, it’s not even a question. I’m sure there will be some damage to repair, but I do not plan to take any more time off of keto until the wedding, not even at Christmas.
